Buscando la forma de explicar lo que es un enyucado, me encontré esta receta que cautivó mi atención. En un inicio pensé que era miel de abeja pero leyendo la preparación y sus ingrediente ví que es tapa de dulce... hummm... suena interesante la combinación así que la comparto con ustedes.
Ingredientes del Buñuelo
500grs yuca
2 huevos
1 taza de aceite
Ingredientes de la Miel
250grs de tapa de dulce o panela
1 taza de agua
1 astilla de canela
Preparación
Cocinar la yuca en agua con sal hasta que se suavicen. Sacarlas y aún calientitas, hacerlas puré y dejar enfriar.
Batir los huevos e incorporarlos a la masa hasta que quede suave y brillante.
En un sartén poner el aceite y echar una bolita de la masa hasta que dore. Al estar listas retirar del fuego y poner sobre un papel absorvente.
Para la Miel:
Hervir la taza de agua con la astilla de canela. Al hervir agregar la tapa de dulce y mover hasta disolver. Cuando se enfríe servir encima de los buñuelos o a un lado.
